The Great Healthy Indian Snack – Samosa

Introduction to Indian Snacks

India - the land of best food in the world. If you ever get a chance to try at an Indian restaurant, I bet; Samosa would have been a top snack choice. Whether you are vegetarian or not, this flaky and flavourful snack will make you fall in love with it immediately. It is sold all day long and has become a part of life for many Indians spread across the world. It is incredible delight made from just 12 main Ingredients within 1 Hour. Deep frying or Air fry or baking samosa is totally your choice. Samosa tastes best with hot cup of tea/coffee during rainy evenings. I recommend you to try it out first, before making this incredible dish at your home.

So, what is Samosa?
Samosa is typically deep-fried fritters, with spiced mashed potatoes, green peas filling. Though there are meats, cheese and many other fillings are also available, however potato and green peas’ version is widely savoured by all.

 For Dough (Outer cover)

  •  2 cups whole wheat flour

  •  1/2 teaspoon Carom Seeds (Ajwain)

  •  2 tablespoons oil/ ghee

  •  Few golden fried cashew nuts (Optional)

  •  ¾ cup water

  •  ¼ tsp salt

 For potato filling

  •  2 potatoes, medium to large size

  •  2 tablespoon vegetable oil, divided: 1 tbsp for garam masala

  •  1/2 teaspoon turmeric powder

  •  1 teaspoon red chili powder

  •  1 teaspoon salt

  •  1 cup boiled peas

  •  1 teaspoon chopped fresh coriander leaf, optional

  •  A pinch of Hing (Asafoetida)



  1. Wash & boil potato and fresh green peas. Peel the skin and mash the potato using fork (Leave few small pieces of potato in between too).

  2. To make a dough, add whole wheat flour, salt, oil, carom seeds and water as per requirement. Make a smooth dough mix with the dry dough ingredients and add water slowly. Rub the flour in between your fingers and add oil to get in right form.

  3. Knead the Dough well till it becomes firm, stiff and non-sticky. Later give rest to the dough for 30 mins.

  4. In a medium heated Maxima’s Tri Ply Fry Pan, add 1 tablespoon of cooking oil, mashed potatoes, peas, garam masala, salt, turmeric, pinch of Hing (Asafoetida) and red chili powder. Stir the potato filling for 5 mins in low heat till tasting and adjusting along the way for your preference.

  5. Turn off stove and add chopped coriander leaves, fried cashew nuts to the filling (Optional). Then transfer to a bowl and set aside.



      Making Samosa : Fun with Folding

      1. Here comes the artistic and fun part of this recipe. Take the dough and roll it out into long oval shape roughly around 7-8 inches long.

      2. With a knife or sharp edge, portion this oval into 8-9 smaller parts (Not too big or too small). Take a piece and roll it into a smooth ball at a time.

      3. Then dust this ball with some dry flour, and then roll it into a circular shape with roll pin, roughly 6 to 7 inches in diameter. Cut the rolled dough diagonally so you get two semi-circular pieces. Take one piece and lay it on your hand so the straight edge lines up against the left side of your hand.

      4. Wet the corner of the circular piece and fold it in cone shape without any hole or crack and wider in one end. Fill the potato filling more than half in the cone evenly and close the cone filling carefully by pressing in corner. Make sure the filling is sealed properly all around without any crack or filling leak.

      5. You can add more or less of filling depending on the dough pieces. Once the samosa pieces are ready with the filling. It is time to take a delightful oil dip (If deep fried).

      6. Deep fry the samosa’s in Maxima’s Tri Ply kadai for few minutes and take it out when it is fried in golden brown colour. (Air fryer/baking with a coat of oil in the outer layer of samosa)

      7. For plating, serve hot samosas with tomato sauce and chilli sauce / tomato ketchup at the side.

          Time to Relish your Samosaaa….

          Once you serve piping Hot Samosa’s, please take a window side chair or your personal favourite spot. Relax a moment and take a big bite of the great healthy samosa with ketchup / tomato sauce and chilli sauce. Though it is deep fried, the dough will not absorb much oil and doesn’t contain any added preservative or colour.

          We used whole wheat flour, fresh coriander (herb), peas, potato, healthy spices and moderate salt. Hence it is easy to make, healthy and tasty to eat for all.
