How to make delicious Pav Bhajji at home?

A bit about Pav Bhajji

Pav Bhajji is a delicious Indian gravy with mashed vegetables (Bhajji). The bun (Pav) is fried with butter and served along with the Bhajji. Hence the name, ‘Pav Bhajji.’ Nicely chopped onions, a cut lemon, and a garnish of coriander accompany the main serving. Pav Bhajji is quite famous in Mumbai. Though they originated there, it will not surprise you to find them in street shops almost in every corner of every city you walk in. 

Without further ado, let us share how to make delicious Pav Bhajji at home.

 

Recipe for Pav Bhajji

 

The ingredients

  • Vegetables - The masala needs an assortment of vegetables to make the Bhajji. Carrots, capsicum, potatoes, peas, onions, and cauliflowers. You can either omit or add based on your preferences but avoid eggplants, radish, corn, or okra.
  • Butter - It is essential to get that spongy texture for the bun and improve consistency.

    Making the Pav Bhajji Masala

    You can make the Bhajji masala beforehand because it may come in handy in the future. An air-tight canister helps to keep it fresh. You can find some Kitchen Jars Online to store for long-term use. To make the Bhajji masala, roast the following ingredients and make them into a fine powder:

    • Two tablespoons of Coriander Seeds
    • One black & Two green cardamoms
    • One tablespoon of peppercorn
    • One tablespoon of jeera
    • Half tablespoon of Fennel seeds
    • Three red chilies 
    • Three to four cloves

    Once you are ready with this, let us proceed with the main dish:

     

    Making the main dish - Pav Bhajji

    The measurements may differ depending on the serving size. Therefore, adjust the quantities specified in this to meet your preference.

    1. Chop all the following vegetables in the following quantities:
      1. 1 cup of carrot
      2. 3 cups of potato (pick a medium size)
      3. 1 cup of cauliflower
      4. ⅓ cup of beans
      5. 1 cup of green peas
    2. Now, mix all the vegetables in a Tri Ply Pressure Cooker and add about 2.5 cups of water.
    3. Let the vegetables cook for a maximum of 12 minutes or 5-6 whistles. Ensure you do this on medium heat.
    4. Once it is done, carefully open the cooker and check whether the vegetables are tender and evenly cooked. 

     

     Saute the spices 

     Take out your Triply Tawa from the shelves. Heat it. Add two or three tablespoons of butter.

    1. Once the butter melts, put 1 tablespoon of cumin seeds and let it sizzle to a brown color.
    2. Add half a cup of nicely chopped onions. Then continue sauteing the mixture till the onion get a see-through texture.
    3. Once you get the right consistency, put two spoons of ginger-garlic paste or as needed.
    4. Keep cooking until the raw smell of the ginger-garlic paste is lost.
    5.  Now add one or two chopped green chilies.
    6.  Add two chopped tomatoes and cook until it becomes slushy in texture.
    7.  Then add half a cup of capsicum and cook for another minute or so.
    8. Once the mixture is in the desired consistency, add 2-3 tablespoons of Bhajji Masala.
    9.  Add the required amount of water and salt as needed.
    10.  Then start mashing the mixture.
    11.  Let the gravy cook for about 10 minutes and do not forget to stir occasionally. It prevents the gravy from sticking or getting thick. The mixture must be in a semi-solid consistency.

     

    Making the Pav

     We have finished half of the cooking, now all we need to do is make the Pav.

    1.  Slice the bun in half and keep it ready for cooking.
    2.  Heat the Tri Ply Frying Pan and add butter as needed.
    3. Add 1 tablespoon of the Pav Bhajji masala while the butter is melting.
    4. Then place all the buns on the pan and let it fry. Ensure the mixture spreads evenly on all sides of the bun.

     

    Serve time!

    Now start plating the gravy in a bowl. Bring the buttery Pav as well. Accompany this delicious main serving with a side of chopped onions and a pinch of lemon. You may garnish it with coriander for presentation. And ta-da! You have successfully made Pav Bhajji for a great evening snack.
